Pet Nat is an increasingly popular wine. And for good reason! Forget everything you've ever heard about sparkling wines, a new generation of sparkling wines is arriving, full of freshness, boldness and flavor!
There are many legends about the first Pet Nat. The origin of sparkling wine is attributed to the Benedictine monks of Saint-Hilaire Abbey. In 1531, a monk discovered in the spring that wine bottled in winter produced bubbles due to the resumption of alcoholic fermentation interrupted by the cold. After perfecting the technique, the monks began to master the art of bubbles.
This production method is quite different from the "Méthode champenoise", which is the way champagne is produced, in which the base wine is fully fermented and then undergoes a secondary fermentation in the bottle with the addition of yeast and sugar. Another difference with Champagne is that Pet Nat is not usually disgorged after the end of fermentation (the method by which the sediment from the second fermentation is removed from the bottle), so some cloudiness is common.

How do we produce our Pet Nats?
To produce Pet Nat, Quinta da Raza uses the ancestral method, which is arguably the oldest way of producing sparkling wine due to its simplicity.
Raza Pet Nat is a natural sparkling wine that undergoes as little intervention as possible. The grapes are harvested and pressed. Wild yeasts begin alcoholic fermentation, consuming the sugar in the must and transforming it into alcohol and releasing carbon dioxide. Before all the sugar is consumed, we bottle the wine and wait for the alcoholic fermentation to finish. The transformation of the remaining sugar produces more carbon dioxide, which is trapped in the bottle, causing bubbles in the wine.
Quinta da Raza produces two Pet Nats, one WHITE and a ROSE.
The wines are full of vibrant orchard and red fruit flavors. Their natural sediment makes them cloudy while increasing the complexity of the flavors. They are ideal as an aperitif or to celebrate moments of pleasure.
